Turkish Aubergine Salad Recipe

An appetizing turkish aubergine salad

This is a great Turkish starter called a meze which is traditionally served before a main meal of fish or broiled meat.


6 large aubergines
1 onion, peeled and finely sliced
6 green peppers, sliced
2 tomatoes, peeled and sliced
12 black olives
½ cup olive oil
1 tablespoon vinegar
Juice of 1 lemon

Recipe Instructions

Prepare the aubergines.
Grill the aubergines whole until they are burned on the outside but soft on the inside.  Cool them by placing them under running water.  Once cooled, peel off the skin and cut off the stem.  Mash the aubergine with a fork.

Prepare the salad.
Put the lemon juice and olive oil into a bowl.  Place the mashed aubergine in the bowl and mix it well with the lemon juice and the olive oil.  Add the vinegar and salt and stir well.

Arrange the salad on a serving dish and decorate it with the tomatoes, peppers, onion and black olives.
