Spicy Aubergines Recipe

A easy to make aubergine side dish

This is a Zakynthian version of Imam Bayildi which is just as tasty and very easy to make.


3 aubergines, diced
3 cloves garlic, crushed
1 large onion, finely chopped
Large tin chopped tomatoes
5 tablespoons olive oil
Handful of sultanas
2 tablespoons ground cumin
2 tablespoons turmeric
2 tablespoons mild curry powder
2 tablespoons ground coriander
Mint and Greek yoghurt to serve

Recipe Instructions

Fry the onion and garlic.
Heat the oil in a wok (or large pan) and add the onion and garlic. Fry over a low heat until the onion are garlic are soft. Stir in the spices and cook for another 2 minutes stirring continuously.

Cook the aubergines.
Add the aubergines and tomatoes to the onion and garlic mix and cover the wok. Let this simmer over a low heat for 45 minutes stirring occasionally. After 45 minutes add the sultanas and cook covered for another 10 minutes.

Turn off the heat and allow everything to cool. Place in the refrigerator overnight. Serve cold wit the mint and the yogurt spooned over the top.
