Simple Aubergine Salad Recipe

A simple salad that is great for picnics
Yield: 4    Preparation Time: 30 minutes plus 2 hours to marinade    Cooking Time: 20 minutes
A delicious salad that is great to serve when having barbeque or to take along for a picnic.


3 aubergines
½ red pepper, finely sliced
1 clove garlic, finely chopped
½ green pepper, finely sliced
50ml red wine vinegar
50ml olive oil
Black pepper

Recipe Instructions

Preheat the oven to 200C.

Prepare the aubergines.
Prick the aubergines with a fork and place them on a baking tray. Place them in the oven and let them bake for 20 minutes until they are soft. Remove from the oven and once cooled, peel off the skin and remove the seeds. Chop up the flesh and place in a large salad bowl.

Add the other ingredients.
Add the garlic, red wine vinegar and olive oil. Stir well and season to taste. Add the peppers. Cover the salad and place in the fridge to marinate for 2 hours.

After 2 hours, remove from the fridge and serve while still chilled.
