Roast Aubergine with Red Pepper Salad

Prepare the aubergine.
Sprinkle the aubergine pieces with salt and leave them to sit for 20 minutes. Rinse them with water and then pat dry with paper towels. Drizzle olive oil over the aubergine pieces and season them with the cumin, paprika, cinnamon, salt and pepper.

Bake the aubergine.
Place the aubergine pieces onto a baking tray and place them in the preheated oven at 400F. Bake for 30 -40 minutes until they are tender. Remove from the oven and set aside to cool.

Make the dressing.
Mix together the chopped mint and pomegranate vinaigrette.

Make the salad.
Mix together all the salad ingredients and throw in the roasted aubergine. Drizzle over the dressing and toss.
