Aubergine Starters and Appetizers

French Aubergine Flan Recipe

An appetizing aubergine flan
Yield: 6    Preparation Time: 30 minutes    Cooking Time: 35 minutes
This dish can be served as a hot starter or you can serve it with a salad for a light lunch.


1kg aubergines
4 large eggs
60gr flour
20ml fresh single cream
Salt, pepper, nutmeg

Recipe Instructions

Preheat oven to 230C.

Prepare the aubergines.
Peel and slice the aubergines. Place the aubergine slices in boiling salted water for 20 minutes until they are soft. Remove them from the heat and drain them. Place them in a blender and puree.

Make the flan.
Mix together the pureed aubergines, the eggs, fresh cream, flour, salt, pepper and nutmeg. Pour the mixture into an oven proof dish and place in the oven.

Bake the flan.
Bake the flan for 35 minutes. Remove from the oven and set aside to cool.

    I recently ordered aubergine flan at a restaurant. Flan indicates, an open shallow shell of pastry or sponge with a filling. Having questioned this with the waiter a copy of you recipe was given to me. I ate what was served and enjoyed it but I feel that using the title of flan is misleading.
