Chicken, Aubergine and Sweet Potato Balti Recipe

With three easy ingredients it is more economical to make your own delicious curry at home instead of spending money on takeaways.


500g chicken breast fillets, cubed
1 aubergine, quartered and sliced
1 large sweet potato, peeled and sliced
1 jar balti sauce
2 tablespoons vegetable oil
Pilau rice to serve

Recipe Instructions

Fry the ingredients.
Heat the oil in a large frying pan and stir-fry the chicken for 6 – 8 minutes until it turns a pale golden color. Add the aubergine and sweet potato and stir-fry for another 4 minutes.

Cook the sauce.
Add the balti sauce and half a jar of water and bring the mixture to the boil. Reduce the heat and let the mixture simmer for 10 – 15 minutes until the sweet potato is soft.

Serve with pilau rice.
