Baked Sliced Aubergines with Nuts and Red Peppers Recipe

A scrumptious aubergines with nuts and red peppers

A delicious baked dish that is full of flavor yet simple and easy to make.

Ingredients

2 medium aubergines
2 red peppers; quartered, cored and seeded
100ml olive oil
Pine nuts
Thyme
Raisins
Mint leaves
Black pepper

Recipe Instructions

Preheat oven to 200C.

Bake the aubergines.

Slice the aubergines into 1cm thick rounds and place them on a baking tray which has been brushed with the olive oil.  Add the red peppers, brush them with olive oil and sprinkle over a little thyme.  Season with salt and coarsely ground black pepper.

Place in the oven and bake for 15 – 20 minutes until the aubergines are tender.

Add the other ingredients.

Remove from the oven and sprinkle over some pine nuts and raisins.  Place back in the oven and grill for a minute until the nuts have colored.  Remove from the oven and scatter oven some torn mint leaves and coarsely ground black pepper.

Serve.
Serve with the thick cold yogurt which has had some chopped mint stirred in.
