Aubergine Salad Dip Recipe

A marvellous aubergine salad dip

A fabulous dip that is quick and easy to make and compliments any type of salad.

Ingredients

6 round aubergines
Onion
3 cloves garlic
Oil
Juice of 1 lemon or vinegar
Salt and pepper
Parsley

Recipe Instructions

Bake the aubergines.
Prick the aubergines with a fork and place them on a baking tray. Bake them in a hot oven until they are soft. Remove them from the oven and allow them to cool. Once they have cooled enough to handle, peel and chop them.

Blend the ingredients:
Place the chopped aubergine in a blender and blend until it becomes pulp. Add the onion, garlic, parsley and lemon juice/vinegar and blend all the ingredients together until the pulp becomes soft. Add salt to taste.
