Aubergine Chutney Recipe

A delicious aubergine chutney recipe
Yield: 4    Preparation Time: 20 minutes    Cooking Time: 15 minutes
This aubergine chutney should not be confused with a preserve, but it makes a great accompaniment to any Indian curry.


1 medium aubergine, cubed
1 medium onion, chopped
2 to 4 red chilies
1 to 2 green chilies, chopped
2 tablespoons tamarind paste
1 tablespoon oil
25g fresh coriander leaves, chopped
1 tablespoon salt

Recipe Instructions

Cook the aubergine.
Heat the oil in a large frying pan over a medium heat and add the aubergine. Sprinkle it with salt and fry it until it is tender. Remove the aubergine from the pan and set it aside to cool.

Make the chutney.
Place the chopped onion, tamarind paste, red chilies and aubergine into a blender and mix. Then add the green chilies and coriander and stir the ingredients together. Serve at room temperature.

Side note.
You can increase or decrease the amount of chilies according to your own taste.
