Aubergine Bread Recipe

An easy to make aubergine bread

Something completely different to serve to your family and friends. Tasty, easy to make and best of all, healthy.


350g aubergine
100ml olive oil
1 tablespoon soy sauce
2 cloves of garlic, crushed
3 eggs
75g breadcrumbs
50g grated cheese
2 tablespoons parsley, chopped
2 tablespoons fresh basil, chopped
Salt and pepper

Recipe Instructions

Preheat oven to 200C.

Prepare the aubergine.
Cut the aubergine into pieces and then place them in a blender and mince. Remove from the blender and place in a bowl for later use.

Combine all the ingredients.
Place the rest of the ingredients into the blender and mix them all together. Fold in the minced aubergine.

Bake the bread.
Grease a loaf tin and pour in the bread mixture. Bake in the oven for 20 minutes and then reduce the oven temperature to 180C. Bake for another 15 minutes until a skewer comes out clean. Remove from the oven and cover with a cloth, leave the bread to stand for 10 minutes like this before turning it out. Slice and serve.
