Aubergine and Tomato Bake Recipe

A great aubergine side dish that your family will love

A tasty dish that is simple and easy to make that the whole family will love.


4 aubergines, thinly sliced lengthwise
1½ cup grated Mozzarella
2 teaspoons garlic
2 tomatoes, thinly sliced
3 tablespoons butter
1 cup chunky cottage cheese
¼ cup grated Parmesan
250ml Nando’s Sun-Dried Tomato and Basil Marinade
Salt and freshly ground black pepper

Recipe Instructions

Preheat the oven to 180C.

Prepare the aubergines.
Sprinkle salt over the aubergine slices and place them in a colander. Let them stand for 30 minutes. When the 30 minutes is over, rinse them under running water, drain them and pat them dry with paper towels.

Fry the aubergines and garlic.
Heat the butter in a large pan and fry the aubergines and garlic for a minute on each side.

Layer and bake.
In an ovenproof dish layer the ingredients as follows; a layer of aubergines, a layer of tomato, a layer of the marinade, a layer of cottage cheese and a layer of mozzarella on top. Repeat the layering until all the ingredients have been used up, making sure to end with a layer of mozzarella. Season with salt and pepper and sprinkle over the Parmesan cheese.

Place in the oven and bake for 20 – 25 minutes until the cheese has turned golden brown.
