Aubergine and Mushroom Flan Recipe

A tasty aubergine mushroom flan

A deliciously light and tasty aubergine recipe that is ideal to serve as a light dinner or for a full lunch.


For the pastry:
100g margarine
175g whole meal flour
2 tablespoons water
Pinch Salt

For the filling:
1 large aubergine
2 eggs, beaten
150ml milk
100g mushrooms, sliced
100g low fat cottage cheese, sieved
15ml chopped parsley or mint
Salt and freshly ground black pepper

Recipe Instructions

Preheat the oven to 180C.

Make the pastry.
Mix together the flour and the salt then rub in the margarine with your fingers. Rub the mixture together until it looks like fine breadcrumbs. Add the water and mix together to make a firm dough. Wrap the dough with cling wrap and place it in the fridge to chill for 1 hour.

Prepare the aubergine.
Prick the aubergine with a fork and place it on a baking tray. Place in the preheated oven and bake for 30 minutes turning occasionally until it has browned all over. Remove the aubergine from the oven and set it aside to cool. Once cooled, cut the aubergine in half and scoop out the flesh. Mash the flesh together with the salt, pepper and parsley/mint.

Prepare the pastry.
Roll out the pastry on a lightly floured surface and use it to line a greased 20cm flan ring. Prick the pastry with a fork and line the base with tin foil. Fill the flan with baking bean and bake in the oven at 200C for 12 minutes.

Make the flan.
Remove the foil and the beans and line the pastry base with the aubergine puree. Beat together the eggs, cottage cheese and milk and pour this sauce over the aubergine. Arrange the mushrooms on top of the sauce in circles and season with salt and pepper. Return the flan to the oven and bake for 30 minutes at 180C for 30 minutes until the flan has set and turned golden brown.
